Easy Paneer Biriyani

 

Easy Paneer Biriyani

Ingredients:-

Basmathi Rice – 1 cup ( Soaked in water for 30 minutes & drained)
Ghee – 2 tbsp + 1 tbsp
Bayleaf – 1 number
Cloves – 2 numbers
Cardamom – 1 number
Cinnamon – 1″ piece
Cumin seeds – 1/2 tsp
Carrot – 1/2 cup, finely chopped
Frozen peas – 1/2 cup
Boiling water – 2 cups (1:2 ratio)
Salt – 11/2 tsp
Onion – 11/4 cups, thinly chopped
Ginger – 1 tbsp
Garlic – 1 tbsp / 5 big cloves
Greenchilly – 2 numbers
Kashmiri chilly powder – 1 tsp
Coriander powder – 3/4 tsp
Tomato – 1 big beef tomato, pureed
Pepper powder – 1/4 tsp
Biriyani masala powder – 3/4 tsp
Kasoori methi – 3/4 tsp
Paneer – 1/2 – 3/4 cup
Mint leaves – 2 tbsp
Cilantro – 3 tbsp, chopped

Method:-

Heat 1 tbsp of ghee & add the bayleaf, cloves, cardamom, cinnamon & cumin seeds. When you get an aroma of the spices add the finely chopped carrots & the frozen peas. Fry for 2 minutes; add the rice & saute till it turns opaque. Add 2 cups of boiling water & 1 tsp of salt. Bring to a second boil & cover cook on low heat for 10 minutes. Keep it undisturbed for 10 more minutes.

For making the masala, heat 2 tbsp of ghee & saute the onions till they turn brown. Grind the ginger, garlic & greenchilies to a paste. Add this paste to the masala & fry for 5 minutes. Stir in coriander & kashmiri chilly powders & fry for a minute. Add the pureed tomato &  fry for 5 minutes. Add the pepper, biriyani masala & kasoori methi powders. Pour 1/4 cup of water, add enough salt, chopped cilantro, mint leaves & the cubed paneer. Bring to a boil & cover cook on low heat for 5 minutes/ till the paneer turns soft.

Mix this paneer masala carefully with the cooked rice. Your paneer biriyani is ready!
