These vadas are soft, easy to make & a great snack to have with your afternoon tea.
You need 6 medium slices of bread.
Trim the brown edges of the bread slices & cut them into small cubes. Mix together the bread cubes with half of a red onion (finely chopped), 2 greenchillies (deseeded & finely chopped), a sprig of curry leaf (finely chopped), 1/2 cup of thick curd, 3/4-1 tsp of salt, 1/4 tsp of baking soda, 1/2 tsp of cumin seeds & 1/4 cup of ground almond/cashew paste. Mash bread pieces well & keep this mixture aside for 15 minutes.
Make small balls from the mixture, flatten in your palm & make a hole in the centre with your little finger. Deep fry the vadas in hot oil on medium heat till golden brown on both sides
