Surprise Vegetable Donuts
For the dough dissolve 1 tbsp of active dry yeast & 1/2 tbsp of sugar in 1/4 cup of lukewarm water. Keep aside for 10 -15 minutes/ till frothy. Mix together 2 cups of all purpose flour, 1 tbsp of sugar & 3/4 tsp of salt. Make a well in the middle of the dry ingredients & add 1 tbsp of melted butter, 1 beaten egg, 1/8 cup of lukewarm evaporated milk, the fermented yeast solution & enough lukewarm water to make a soft dough. Knead well for 5-6 minutes. Keep aside for 1 hour/till the dough doubles in volume.
For the vegetable filling heat 1 tbsp of canola oil & add 1 minced garlic clove. Add half of a red onion chopped finely & saute till it turns translucent. Add 1 cup of chopped cabbage, 1/4 cup of peas, 3/4th of a big carrot (grated) & 1/2 tbsp of chopped capsicum. Saute for a minute & add salt, 3/4 tsp pepper powder & 1 tsp of soy sauce. In another pan heat 1 tbsp of butter & add 1 tbsp of flour. Add in 1/4 cup of water & cook till the sauce thickens. Add this sauce to the cooked veggies & mix well.
To make the donuts, divide the doubled dough into lemon size balls & roll out each ball into a rectangle slightly thicker than roti. Place little filling on one side of the rolled out dough as shown below. Roll the dough around the filling & seal both the ends very well ( you can use water to seal them tightly). Shape into a ring by bringing both the sealed ends together & deep fry in hot oil on low heat till golden brown on both sides.
Steamed Vegetable Dumplings:-
Prepare the vegetable filling in the same way as for donuts. Add 2 pinches of 5 spice powder ( dry roast 1 tsp each of fenugreek, cumin seeds, mustard seeds, sesame seeds & 1/8 tsp of ajwain & powder in your coffee grinder), 2 cubes of grated cream cheese, 1 tsp of vinegar & 1 spring onion finely chopped to it.
For the dumplings mix together 1 tbsp of oil, 1 cup of flour & 1/2 tsp of salt. Make a soft dough by adding enough cold water. Divide this dough into 3 portions, roll out each portion into a thin circle & cut out smaller circles of 4″ diameter by using a lid. Place a little filling ( 1 tbsp) in the center of each circle & seal it by bringing together the ends of the dough above the filling so that they look like Momos.
Steam the dumplings for 15 minutes.
